Stuffed Capsicums

Great for lunch or dinner, these bolognese mince and veggie stuffed capsicums are delicious and quick to prepare!

Ingredients

  • 4 capsicums, cut in half lengthways and deseeded
  • 2 tablespoons Coles Classic Olive Oil
  • 500g Coles Bolognese Mince
  • 250g pouch Coles Microwave 7 Ancient Grains
  • ½ x 1kg packet frozen Birds Eye Carrot, Peas & Corn
  • 500g jar Leggo's Bolognese Pasta Sauce

Method

STEP 1
Lightly brush capsicum halves with 1 tablespoon oil and arrange cut side up on a baking paper lined tray. Cook in a preheated oven at 180°C for 20-25 minutes or until softened.
STEP 2
Meanwhile, heat remaining oil in a large non stick frypan over high heat. Add mince and cook for 8-10 minutes or until browned. Stir through grains and frozen Birds Eye Vegetables and cook for 3-4 minutes or until fully cooked. Stir through Leggo's Pasta Sauce, bring to the boil
STEP 3
Using a pair of tongs, carefully drain excess moisture from capsicums. Spoon bolognese mixture into capsicums and serve.
Tips
Garnish with fresh parsley leaves for serving.
