Ingredients
- 6 sheets rice paper
- 12 fresh mint leaves
- 1 Coles Hass Avocado, sliced
- 2 cups Coles Kitchen Fine Cut Coleslaw
- 2 x 100g packets John West Salmon Fillet - Chilli with a Hint of Lemon Zest, flaked

Method
STEP 1Dip rice paper sheet in warm water to soften. Lay on a flat surface.
STEP 2
Place 2 mint leaves diagonally in the middle of rice paper round, followed by 2 slices avocado, ⅓ cup coleslaw and ⅙ of flaked John West Salmon Fillet.
Tips
Serve rice paper rolls with a dipping sauce on the side.
