Chicken and Veggie Chip Dinner

Switch your chips out for some extra veggies in this delicious chicken skewer dinner recipe.

Ingredients

  • 750g pre prepared marinated chicken skewers
  • 2 teaspoons extra virgin olive oil
  • 300g frozen Birds Eye Broccoli and Cauliflower Veggie Rice
  • 1 cup frozen Birds Eye Garden Peas
  • ½ cup chopped fresh herbs (parsley, dill, chives)
  • 450g packet frozen Birds Eye Veggie Chips - Sweet Potato & Carrot
  • Herb yoghurt, for serving (see tip)

Method

STEP 1
Cook chicken skewers following packet directions.
STEP 2
Meanwhile, heat oil in a large non stick frypan over medium-high heat. Add frozen Birds Eye Veggie Rice and frozen Birds Eye Peas. Cook for 6-7 minutes, stirring occasionally until fully cooked through.
STEP 3
Cook frozen Birds Eye Veggie Chips following air fry packet directions.
STEP 4
Stir herbs through cooked veggie rice. Serve topped with chicken skewers and herb yoghurt on the side.
Tips
Combine 1 cup Greek style yoghurt with ¼ cup chopped fresh herbs (e.g. dill, parsley, chives) to make herb yoghurt.
