Chicken & Lemon Myrtle Veggie Tray Bake

Native flavours of lemon myrtle and mountain pepper infused vegetables make a welcome addition to a simple chicken tray bake.

Ingredients

  • 2 large chicken marylands
  • 2 teaspoons oil
  • Salt and freshly ground black pepper, to taste
  • 600g packet frozen Birds Eye Deli Potato, Cauliflower, Green Beans & Baby Carrots, Mountain Pepper, Lemon Myrtle & Honey

Method

STEP 1
Toss chicken in oil and season to taste. Transfer to a shallow baking dish, approximately 30cm x 20cm.
STEP 2
Bake in a preheated oven at 200°C for 25-30 minutes. Add frozen Birds Eye Deli XXXX (Name to be confirmed) and cook for a further 20 minutes until veggies are fully cooked.
Tips
Chicken cutlets or drumsticks can be used instead of marylands if desired. Reduce cooking time by 5 minutes.
