Place pumpkin, capsicum (cut side down), zucchini and onion on a baking paper lined tray. Spray with oil and season to taste. Place in a preheated oven at 200°C and cook for 15 minutes or until browned.
Meanwhile, place pizza bases on lightly oiled baking trays, spread with Leggo’s Pizza Sauce and top with mozzarella cheese.
Remove vegetables from oven and allow to cool slightly. Remove skin from capsicum and discard. Cut capsicum into thin slices.
Arrange roasted vegetables on pizza bases and top with pine nuts. Bake in a preheated oven at 200°C for 10-15 minutes. Serve sprinkled with goat cheese.
