Italian Sausage & Red Capsicum Ragu

An Italian style one pan casserole served with cooked pasta

Serves: 4

Ingredients

  • 1 tablespoon olive oil
  • 6 Italian style sausages
  • 1 small red capsicum, cut into small wedges
  • 350g jar Leggo’s Stir Through Sauce – Sundried Tomato and Roasted Garlic
  • 1/3 cup red or white wine
  • Fresh parsley leaves, for garnish
  • Cooked pasta, of your choice, for serving

Instructions

Step 1

Heat oil in a non stick frypan. Add sausages, capsicum and cook for 4-5 minutes or until the outside of the sausages are lightly browned.

Step 2

Stir in Leggo’s Stir Through Sauce and wine, simmer uncovered for 10 minutes, stirring occasionally. Serve with cooked pasta.

Italian sausages are available in butchers, supermarkets and delicatessens.
