Cook pasta following packet directions, drain and keep warm.
Meanwhile, heat oil in a large frypan over medium high heat. Add chicken pieces and cook for 1-2 minutes on each side. Remove from pan and set aside.
Add mushrooms and garlic, cook for 2 minutes, stirring continuously. Return chicken to pan. Stir in combined Leggo’s Tomato Paste, stock and cream. Reduce heat and simmer for 2 minutes, stirring occasionally. Stir pasta through sauce and sprinkle with parsley.
