Creamy Chicken And Mushroom Pasta


Chicken fillets in a creamy mushroom sauce.

Serves: 4


  • 400g short pasta
  • 2 tablespoons olive oil
  • 2 chicken fillets, sliced
  • 200g Swiss Brown mushrooms, quartered
  • 1 clove garlic, crushed
  • 1/3 cup Leggo’s Tomato Paste
  • 1 cup chicken stock
  • 100ml thickened cream
  • 2 tablespoons chopped fresh parsley


Step 1

Cook pasta following packet directions, drain and keep warm.

Step 2

Meanwhile, heat oil in a large frypan over medium high heat. Add chicken pieces and cook for 1-2 minutes on each side. Remove from pan and set aside.

Step 3

Add mushrooms and garlic, cook for 2 minutes, stirring continuously. Return chicken to pan. Stir in combined Leggo’s Tomato Paste, stock and cream. Reduce heat and simmer for 2 minutes, stirring occasionally. Stir pasta through sauce and sprinkle with parsley.

Tasty Tip!

The sauce for this recipe can be used as a filling for pot pies. Simply cool, and spoon into pie dishes, cover with puff pastry and bake until golden.
